  1. A Blog about a Manga…

    After working tirelessly for over a month to correct, change, and re-draw a manga (Japanese comic book) I started three years ago, I have finally produced and uploaded the first issue of Super Lucky Angel Cake

    Everyone is free to read it and in fact, I encourage you to, but make sure you read the warning on the author’s notes page.

    That being said, the story obviously combines two of my favorite topics: religion and food. Check it out and “Like” it on Facebook!

  2. The Marvelous Transformation of Chris’s Strawberry Cheesecake Muffin Cake

    Finally, after several months of having not really seen Chris and Jim, I managed to make it over to their house.

    Consequently, because I hadn’t slept well that night, I ended up missing Mass this morning.

    That also has to do with something of a bad feeling I had, and on top of that, my dreams seemed to be indicating that something important is going on in my life, so I’ve been paying more attention to them and thought sleep would do me better than Mass. That is, of course, up for debate, but moving on…

    Chris decided to make Strawberry Cheesecake Muffins, but instead of making muffins, he mixed all the batter together and made a mini-cake.

    I mocked the mini-cake at first upon seeing how little it was, but believe it or not, Chris gave it a lot of flavor by adding cream cheese icing and some of the strawberry jam that Kelly had made.

    So this…

    I am but a lonely, lowly cake; please love me.

    …turned into this!

    Magical Baker’s Skill, GO! OH! Now I am so, so beautiful and tasty.

    Jim and I both said that the cake was good and would probably have been better without the added icing. Most of us are in the same boat with prefering to eat desserts that aren’t too terribly sweet.

    Isn’t it pretty?

    Chris also promised that he’ll make my caramel cake the next time I come over. Gigi’s looked for a caramel cake for me since but has been unable to find one; we’re both sure we’ve seen them at the store in Slocomb, though.

    Since the mixture is basically pre-made, I may be able to start baking cakes in a similar way at my house. In fact, provided that hurricane doesn’t blow us away, let that be our mission for this week!

  3. Gigi’s Sort-of Eggplant Parmesan!

    Gigi made this recipe on Thursday. I would alter it to include waaaay more cheese, at that ended up making a better dish after all was said and done.

    What you need:


    • 1 eggplant, peeled and cubed
    • 2 eggs,  beaten
    • 1 small onion,  chopped
    • 1/4 bell pepper,  chopped
    • 1 can cream of mushroom soup
    • 2/3 – 1 cup cracker crumbs
    • 1/4 cup butter, melted
    • 1 can crushed tomatoes
    • 1/4 – 1/2 teaspoon oregano
    • 1/2 – 1 cup cheese (except you probably need like three cups of cheese

     

    What you do:

    1. Boil eggplant in salted water.  Drain well
    2. Mix all ingredients (except crackers and butter and a little bit of cheese).
    3. Grease baking dish and pour mixture into it. (I would say add some mixture, then add cheese; then add more mixture, then more cheese.)
    4. Cover with crackers and melted butter.   
    5. Put a little cheese on top. (I would edit this to say put tons of cheese on top.)
    6. Bake for 40 to 50 minutes at 350 degrees.

     

    Then, eat the hell out of it. (My words, not Gigi’s.)

    We actually didn’t use parmesan cheese for this but some other kind of shredded cheese that was really good. (Usually, this is totally referential to whatever’s on sale that week.)

  4. Baconnaise Recant

    Apparently, despite what was reported on Oprah several years ago, Baconnaise is not, I repeat, is not vegan-friendly.

    It is, however, vegetarian and kosher.

    I’ve yet to figure out why it was presented as 100% vegan, though my guess is that someone had the belief that “vegan” is simply a fancy word for “vegetarian.”

     However, vegan is not, I repeat, not synonymous with vegetarian.

    Veganism is a strict kind of vegetarian diet that does not incorporate any kind of animal product, including eggs and dairy. In other words, if food contains eggs or dairy, then it cannot be considered vegan.

    Sorry to all my vegan friends and readers who may have been accidentally misled by my former reviews on Baconnaise.

  5. Spicy Tuna Casserole

    What you need:

    1 large can of tuna

    1 can of cream of mushroom soup

    1 can of rotel tomatoes

    3/4 of a pack of crackers

    lemon pepper seasoning

    garlic salt

     

    What you do:

    Crush crackers.

    Mix tuna, soup, and rotel tomatoes in a baking dish. 

    Add spices to taste.

    Add cracker crumbs. Mix some more.

    Add cracker crumbs to top (and cheese, if you like.)

    Bake for 20 minutes at 450º.

  6. Fresh Okra Idea: Super Easy, Super YUMMY!

    Take okra, wash, and cut off the tops.

    Cut okra into half-inch slices.

    Place in a bowl.

    Add salt, pepper, and cumin. 

    Add some olive oil.

    Toss well. 

    Eat.

    Fresh, delicious, and exotic all at one time.

  7. That Was WILD!

    I woke up to discover Ruru and Gigi eating some food that Ruru had made: normal Southern food including potatoes, fried okra, cornbread, and corn, you know the drill by now. I had some potatoes and then scurried out into the humidity of Alabama to go to work in an un-airconditioned store.

    After I returned home from work, I took some of the okra, corn, and cornbread put it in a non-stick skillet, salted it well, and fried it all more heavily. Ruru didn’t brown the fried okra, and everything was cold by the time I got home anyway.

    The result was uber-yum. 

    It’s amazing how simply cooking something a little longer can change the entire flavor, how adding a little salt can bring out all the flavor, and even more amazing that I bother eating corn at all.

    Now, children, go and get ye your nosh on!

  8. On Episcopalians, Pasta Salad, and Power Outages

    It’s no secret that Gigi and I love pasta salad, and today, that came through for us. 

    I drove through the dreary weather to Mass at St. Michael’s even though I had a distinct feeling this morning of not wanting to attend. But humans are creatures of habit, and once we’re programmed one way, breaking that programming can be difficult. 

    So I went. 

    I wasn’t planning on staying for the post-Mass feast, as I haven’t stayed for fellowship for a few weeks now, but I somehow ended up doing so. 

    Two different people had made pasta salad, including my friend Will. He declared that it wasn’t homemade while some of the other parishioners told him that one should never admit that one’s food isn’t homemade.

    Then, as he and Dray were leaving, he offered up the pasta salad to me…all because he didn’t want to take it home. 

    So, I gladly accepted, and I brought the pasta salad home while bidding my fellow Episcopalians good-bye. 

    When I arrived home, I started to pop the pasta salad into the fridge…

    …and noticed the light was out.

    Then I realized: the power was out.

    Gigi told me that she had reported the power outage and was told that it woudl be back on between noon and 3:30. 

    This was at 12:30.

    Well, at 4:30, the power still wasn’t on, and it finally came back around 5:30 or so.

    In the meantime, we feasted on Will’s pasta salad which was totally delish. Too bad there wasn’t more of it! (The bowl is enormous.)

    Gigi’s not been feeling well lately, so she wasn’t sure if she could eat it, but she managed to get a bowl down, woohoo!

    Also, I normally drink water, lots and lots of water, and then today, my water bottle was almost empty. Our water system requires electricity since we have a pump, so I couldn’t get any fresh water all the time the power was out. Instead, I drank sodas, nasty Ginger Ale sodas called “Southern Spice” that taste like someone melted a stale gingersnap into a bottle. Oh, woe is me! I’m so happy to drink my sweet, sweet water again. 

    Also, look forward to my review on the off-brand Cheerios tomorrow and how they’re vastly superior to regular Honey Nut Cheerios.

  9. Devil’s Food Cake Cookies

    We’ve all tried to eat healthier after Bapaw’s heart attack, and today I found some Devil’s Food Cake Cookies. Years ago, Snackwell’s released a similar kind of cookie, and I ate some at my grandfather’s house. 

    In those days, I thought they were absolutely awful. 

    I found some off-brand variety today, and wouldn’t you know that it tastes delicious? As I purchased the box, I feared that the cookies would truly deserve the name “Devil’s Food” as they might taste like the foot of Satan himself (or itself.)

    But no! The 12 cookies have quickly been devoured throughout the course of the day.

    I also bought somed Reduced-Fat Cheese Nips. When I finally opened the box and tasted them, I discovered a slightly stale taste. I predicted that Gigi would taste some and make a remark about the stale taste, as Gigi often makes “remarks.”

    My prediction did not come true, as the younger brother was the one who made the remark, and Gigi shrugged it off, saying that often enough, reduced-fat foods do have a strange taste to them.

    Tomorrow is Slocomb’s Tomato Festival, and as food blogger, I should probably go to taste some of the food. However, I could probably come up with my own recipes and ideas for tomatoes and be more satisfied, so I think that’s exactly what I’ll do tomorrow.

  10. Fasts and Breaking Them

    Supposedly, the origin of our word “breakfast” (meaning our morning meal) comes from the concept of fasting, in which one goes without food. We go without food for an extended period of time during the course of the night, and so in the morning, we then “break the fast.” Hence, “breakfast.”

    One of the awful things about being vegetarian or even semi-vegetarian is the moment when you discover you’ve accidentally consumed meat or something that contains meat. The unfortunate reality is that most of us aren’t going to spend all our time looking at every ingredient that ever existed in the food that we eat, so we can’t always be completely safe from consuming products that come from the slaughter of an animal.

    This happened to me two days ago when I ate some dressing that came from the church homecoming, only to discover that it had chicken in it. I only found the chicken because I tasted something funny and then virtually dissected the bit of dressing in the plate.

    I was furious. 

    So, in order to punish myself and redeem myself from this evil atrocity that I committed, I went right on and fasted for 24 hours. 11:30 PM on Monday to 11:35 PM on Tuesday.

    Naturally, I awoke on Tuesday with a voracious hunger and a growling stomach. 

    But I made it, all 24 hours, and I was proud of myself; I don’t fast often, only once before this, but wow, it was pretty amazing to see how I reacted to the fast.

    Now I have a headache, and so I’m going to stop writing.
